PEANUT BUTTER ENERGY BALLS
These little peanut butter energy balls are the perfect pick-me up. They are packed with delicious ingredients and make a perfect snack throughout the day, before or during a run.
Ingredients
400g medjool dates
150g of oats
100g of roasted peanuts
2 tablespoons of peanut butter
2 tablespoons of coconut oil
Method
Place the nuts and oats into a food processor and blend until they form a chunky flour, then add the dates, coconut oil and peanut butter. Blend everything up until a sticky mix form. Then remove from the processor and put into a separate bowl.
Scoop out a fair amount of the mixture with your hands. Press with your hands and roll into balls. Place them onto a tray and leave to set in the fridge for about 2 hours. They will last for a few days.
Remove from the fridge about 15 minutes before eating to allow them to soften.
